Rainbow Chicken (Chef Lily)


Ingredients:
2 large chicken breasts, sliced to thickness of choice. (trimmed)
1 cup each: Fruity Pebbles Cereal and Multi Grain Cherrios, ground
1/2 cup sunflower seeds, ground
2 eggs, beaten
salt and pepper, to taste

Directions:
1.  In large skillet heat fry oil (olive oil, canola oil or vegetable oil)
2.  Beat eggs, place in separate bowl
3.  Ground cereals and seeds together, place in separate dish
4.  Dredge chicken in egg and then into dry mixture.  Place into hot oil.  Season.
     Cook until slightly brown, flip and brown opposite side until cooked.
5.  Drain cooked chicken on paper towel to absorb excess oil.  Cover to keep warm.

Fruity Graham Buttermilk Pork Chops


4-6 Pork Chops, trimmed
olive oil, to saute
1 egg, beaten
1/2 cup buttermilk
1/2 cup each of ground Fruity Pebbles Cereal, Graham Crackers and seasoned Bread Crumbs
(mixed in separate bowl)

Combine cereal, graham crackers and seasoned bread crumbs.  In separate bowl beat egg, add buttermilk.  Heat oil in frying pan.  Dredge chop in wet mixture then in dry, covering on both sides.  Season with salt (to taste), saute, flipping to brown on both sides.

Mini Corn Dogs (Baked "not fried")

1 box 8.5 oz Jiffy Mix
1 egg
1/3 c milk or half and half
6 hot dogs, cut in half
velveeta cheese (opt) or other American Cheese
mini loaf pan, also can use mini cupcake pan

Preheat oven to 350 degrees.  In large bowl mix Jiffy mix, egg and milk.  Spray individual inside of loaf pan with non stick spray so corn dogs do not stick.  Spoon 1 tsp into each loaf or cupcake cavity.
Place half of a hot dog on top of batter, add cheese.  Top with additional batter.  Bake approx. 15 mins.
*Note: You may leave some batter off tops of corn dogs to create an open face corn dog.  Serve with favorite dipping sauce.

Play Dough


Recipe Below is for each color:

1/2 cup flour
1/4 cup warm water
1/2 tsp cream of tartar
1/4 tsp oil
1 Tbs salt
Food coloring
4 small bowls
4 large bowls

Recipe is for one (1) color:  To make four (4) colors you must quadruple recipe.
In each small bowl mix flour, tartar and salt.  In large bowls combine warm water, oil and food coloring.  (remember to drop different colors of dye into each large bowl to make different color balls of dough).  Add each dry ingredient bowls into colored water bowls.  Mix each color ball separately by hand and knead on counter.  Add extra flour, if needed and knead.

Leftover Oatmeal Banana Bread

Ingredients:

1 c prepared, leftover oatmeal
1 ripe banana
2 eggs
4 Tbs butter, softened
1/2 c whole milk
1 tsp vanilla
2 c flour
1 1/2 c sugar
1/4 tsp salt
1 1/2 tsp baking soda
1/4 tsp cinnamon

Preheat oven to 350 degrees.  Spray two loaf pans or one larger baking dish with cooking spray.  In blender combine oatmeal, banana, eggs, butter, milk, vanilla.  Blend on high until complete mixed.  In separate bowl mix flour, sugar, salt, baking soda and cinnamon.  Add oatmeal mixture to dry mixture in bowl, mix.  Pour into baking dish and bake approx 35-45 mins (depending on baking dish used), or poke center with thin knife, done when knife comes out clean.

Kid Friendly Beef and Spaghetti

1/2 lb ground beef
1 can tomato soup
1 can water
1/4 c grated cheese, plus extra for topping
salt and pepper to taste

Brown ground beef in medium pan (medium heat).   Add can of tomato soup and water.  Simmer for 10 mins, add 1/4 c grated cheese and salt/pepper to taste.  Serve with favorite pasta, top w/grated cheese.

Chicken Strips w/Ma'mu'ke Sauce



3 boneless chicken breasts, cut into strips
oil for frying
1 beaten egg
1 c seasoned bread crumbs
1 tbs grated cheese
1/2 tsp dry basil

In small bowl combine bread crumbs, cheese and basil.  In another small bowl break egg and beat.  In medium pan, heat oil on medium.  Dip strips in egg mixture then into bread crumb mixture.  Place into hot oil, brown.  Turn over and brown other side.  Drain on paper towels on large plate.

Ma'mu'ke Sauce:
2 parts mayo
1 part mustard
1 part ketchup
(For Adults: add Horseradish, opt)

Mini Sliders w/Ma'mu'ke Sauce

1 lb ground beef
11 slices american bread
4 slices american cheese
1 cucumber, peeled and sliced into 16 pieces

Roll 1 oz balls of ground beef, flatten into patties.  Place patties into large preheated skillet (med heat).  Brown on each side until no longer red in center.  Toast bread. With cookie cutter or round object, cut 2-2 1/2 inch rings, put aside.  Wash, peel and slice cucumber into 16 slices.  Assemble, enjoy!!!!

Ma'mu'ke Sauce:
1/2 c mayo
1/4 c mustard
1/4 c ketchup
mix all ingredients in small bowl.  Refrigerate any leftovers.
