Fruity Graham Buttermilk Pork Chops


4-6 Pork Chops, trimmed
olive oil, to saute
1 egg, beaten
1/2 cup buttermilk
1/2 cup each of ground Fruity Pebbles Cereal, Graham Crackers and seasoned Bread Crumbs
(mixed in separate bowl)

Combine cereal, graham crackers and seasoned bread crumbs.  In separate bowl beat egg, add buttermilk.  Heat oil in frying pan.  Dredge chop in wet mixture then in dry, covering on both sides.  Season with salt (to taste), saute, flipping to brown on both sides.


Black Russian Pineapple Chicken


4-6 skinless, boneless chicken breast
olive oil, for frying
1 can sliced pineapple, reserve juice
1/4 cup chopped onion
2-3 garlic cloves, chopped
1 tsp chicken base (chicken paste)  sold in soup isle
1/4 cup Kahlua or other brand
3 Tbs brown sugar, more or less to taste (plus extra to sprinkle on pineapple rings)
juice from sliced canned pineapple
8 ozs mushrooms, sliced
1-2 Tbs flour, if needed

Saute seasoned chicken 3/4 of the way done, remove from frying pan and reserve. (Chicken will be returned later to cook completely).  Remove pineapple rings from can (reserve juice).  Sprinkle with brown sugar and place in broiler to slightly brown for color.  Remove from broiler and cover to keep warm.  In frying pan with left over grease saute onion and garlic, add chicken base, stir.  Add Kahlua, brown sugar and juice, stir.  Add mushrooms, cook until soft.  Add flour to thicken juices, if needed.  Return chicken to pan, flipping to coat on both sides.  Simmer on med heat until chicken is completely cooked.  Serve over rice with pineapple rings.

Incredibly Moist Corn Bread


1 cup flour
1 cup yellow cornmeal
1/2 cup sugar (adjust more or less to your liking)
1 tsp salt
3 1/2 tsp baking powder
1/2 cup sour cream
3 Tbs butter, melted
1 egg
1 can cream corn
1/3 cup vegetable oil

Preheat oven to 400 degrees.  Grease a small baking pan. (approximately 9 inch x 6 inch) or (9 inch round)
Mix all dry ingredients together.  Add remaining ingredient, whisk together.  Pour into baking dish
Bake for approx. 20 mins.

Manicotti Crepes or Lasagna Crepes

Crepes:
 
2 cups flour
2 cups water
6 eggs, beaten
1/2 tsp salt
Whisk in large mixing bowl all ingredients.  Batter will be loose.

Heat a 9 inch by 9 inch non-stick skillet.  Spray with cooking spray between each crepe.  Pour ladle full of batter onto hot skillet, tilting to spread and thin out batter across skillet.  You want to use as little batter as possible but cover entire skillet (quickly).  Crepe will cook within 1 min or so.  Flip onto sheet of wax paper when cooked. Use one sheet of wax paper per crepe.  
Use in layers of lasagna.  Crepe may be carefully cut to fit perfectly into lasagna dish.
Crepe may also be sliced into quarters, stuffed with Ricotta Cheese mixture (see recipe below), folded then baked with favorite Tomato Sauce and cheese.

Ricotta Cheese Mixture:
2 lbs Ricotta Cheese
2 eggs
1 tsp dry basil
salt and pepper, to taste
Mix all ingredients into large bowl, thoroughly.

To layer Lasagna:
In large baking dish layer as follows:
Tomato Sauce, cover bottom completely
crepes
Spoonfuls of Ricotta Cheese mixture
Meat or favorite veggies (I use sauteed ground beef and Italian sausage) (opt, spinach or squash..etc)
Shredded Mozzarella Cheese
Repeat layers

Carrot Cake with Cream Cheese Icing


Ingredients

  • (puree in blender)
  • 3 cups cooked pureed carrots
  • 1 1/2 cups vegetable oil
  • 4 fresh whole eggs

  • (add to mixing bowl)
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tsp ground cinnamon
  • 1 tsp allspice
  • 4 ounces finely chopped walnuts (optional)(walnuts can be added on top of icing instead of in cake)
Preheat oven to 350 degrees.  Grease and flour bundt pan.  Carrots, oil and eggs.  Add dry ingredients to mixing bowl.  Add wet ingredients to mixing bowl to combine.  Mix well using a hand mixer or whisk.  Add to bundt pan.

Frosting Ingredients:
  • 1 cup powdered sugar (add more or less to get consistency for drizzling)
  • 2-3 Tbs milk
  • 8 ounces cream cheese (room temp)
  • 1 tablespoon vanilla
