  1. I augmented a bit (more oatmeal, more bananas, less sugar, veg oil instead of butter) And it's great! I love the idea of baking it in a 9 x 13 pan! Sooooo easy!

    1. I am glad you enjoyed this recipe. I created this with my Granddaughters one morning. We had tons of oatmeal left over, which we always do....lol. I agree about adding more bananas. I prob only had one, but usually use two in my breads. It has been a while since I made this. I'll have to try it again soon. Have a great day!

    1. Hi Nancy, Yes, two bananas will be next time. I like the use of coconut oil. I don't think I started using it back when I created this recipe. It was a fun cooking experiment one morning using up left over oatmeal with my Granddaughters. Thanks so much for the tips. Hope you enjoyed your version. Happy Baking! Have a nice day!!! xoxo

  4. This is my go to recipe for using up leftover oatmeal. I usually throw in a few extras like chocolate chips and flax seeds for sending as a school snack, and my boys just love it! Thank you for posting such an easy and versatile recipe@
